Taste the rainbow!

I woke up this morning knowing that it was going to be a rainbow kind of day.

When there is a shoebox full of crayons on your dining room table, how could you NOT want to color a rainbow?

Like I said in my post yesterday, I had fancy schmancy pancakes in mind… time to play!

It all started with typical whole wheat pancake batter. Egg, milk, WW flour, baking powder, sugar, salt, BAM BAM BAM.

(Sidenote: while making these, I giggled the ENTIRE TIME. Seriously, “teeheeheehee-ing” through the entire pancake process)


They came out so much better than I anticipated. I was a little skeptical as to how prominent the colors were going to be but they were nice and bright. Because I’m ridiculous, I decided to get SUPER creative and added strawberries to the red pancakes and bananas to the yellow ones. Look at that, fun colors while being healthy and full of fruits at the same time! Granted, that made it a tad more time consuming that it should have been but when playing in the kitchen, there’s no such thing as time! And what’s even more fun, I was able to make TWO rainbow pancake towers.

Tiny orange pancake is tiny and big yellow pancake is big! Hahahaha. Still awesome either way though 😀

When I finally finished running around my house and showing them to everyone, I knocked down the tower, gave the chocolate chip equipped ones to Serena and had some breakfast…

They’re sort of hidden beneath a giant pile of vanilla yogurt/almond butter deliciousness but I had a yellow, a red and a tiny purple with half a cut up peach on the side. They tasted great, which I expected, but I was extremely pleased with how the banana tasted within the pancake. When I added it to the batter, I melted the bananas in the microwave beforehand. It gave the pancakes a great subtle sweetness! Yellow was definitely my favorite!

I didn’t actually go running yet today but will be venturing off in the next half hour but I knew I HAD to blog about this as soon as possible… the blog comes first! It was so much fun to finally get to make these and I would totes make them again… such a thing only further reemphasizes why breakfast is the BEST meal of the day!

  1. Keri, I love these sooooo much. I was tee-hee-heeing while reading this. My mom now thought I was a crazy person before I showed her the rainbow pancakes!!!
