Bonjour! It’s a lovely day outside and WiiFit kicked my bootay with strength training today! Planks and push ups and lunges and squats and all that good stuff. For the most part I did it out of mourning. You see, my blooming relationship with Terry Simpson has been cut short due to the cancellation of Optimum cable. No longer will I hear his silly grunting noises and curse him for making me do millions of crunches 😦
Unfortunate as that is, my cooking spirit made everything better. I decided to take a shot at an asian inspired kind of shrimp dish. Because the pastry arts is my preference I tend to just throw a bunch of things together and pray for the best. Score one for me… another delicious dinner was created!
As Rachael Ray would say, “Yummo!” This was a lot easier to make than I thought and is composed of the following:
- Pre-cooked shrimp
- Whole Wheat Pasta
All I did was boil the pasta, sauté the veggies with some salt and pepper and throw the shrimp onto the George Foreman (<3). While they were all hard at work cooking themselves, I made a simple peanut sauce using soy sauce, peanut butter, water and some more garlic (I love me some garlic!) Then I just threw everything together in a bowl and topped it with the sauce. Voila! I think the mix of carbs/protein/veggies was balanced enough and it tasted pretty awesome. Another dish to recreate! 😀
And then……. the baking bug got me; I’m pretty sure I have some sort of baking disease. I haven’t indulged in creating cookies in a while and decided that that was what I was going to do. I looked through a bunch of cookbooks and Chubby Chubby actually found the recipe for me…. Pumpkin Oatmeal Cookies!!
Why didn’t I think of that? Baking with pumpkin has been on my to-do list foreverrrrrrr.
Basically it was a regular oatmeal cookie recipe with the addition of pumpkin. Simple stuff. Naturally I tweaked it a bit to up the “healthiness”… one major thing I did was replace the all-purpose flour with whole wheat and cut down on the amount of butter considerably. And you know what?
Everyone LOVED them!
Healthy triumphs again! Nobody could taste the pumpkin and the lack of butter/flour change. Granted, there was still granulated sugar and I may have added some walnuts/raisins/chocolate chips but that was purely based on the “crowd pleasure” strategy. I think I would scare everyone away with simply telling them that they’re HEALTHY COOKIES… gotta ween ’em into it, ya know?
Another recipe that wielded a TON of cookies! And yet ANOTHER thing that will be recreated. I really should invest in a recipe book… put that on the to-do list!
I’m off… Hell’s Kitchen is on in a half hour! That’s another one of those shows that my mom and I have been watching since the first season. Boy howdie, I do love me some Gordon Ramsay sometimes, even if he does yell at everyone and curses like a sailor.
Must say though, I still wouldn’t mind if he cooked for me 😉
