Good morning everyone! My niece had to take a shower this morning so I was up at 6 to make sure she actually got up. I honestly forgot how much I love getting up early. My desire to accomplish things *coughbloggingcough* is always so much greater! While Serena was showering I took on waffle production.

Boxed waffle mix. I wasn’t happy about it but my parents insist that making the batter from scratch is a waste of time. Le sigh. I’m waving the white flag on this one…for now anyway.
I’ve become bored of waffles for the most part. They’re always around and I swear that 50% of the time SOMEONE is talking about them. Today, however, the waffle machine was begging for some whole wheat lovin’.
BAM. Two sets of waffles…. SMART.
I am IN LOVE with the recipe I used today:
- 2/3 cup whole wheat flour
- 1/2 tsp baking powder
- 1 tbsp agave nectar
- 2 tbsp flax egg
- 2/3 cup milk
- Pinch of salt
- 2 tsp vanilla
My first time using agave nectar AND flax egg and BOTH were a success!
OK, they’re not the prettiest waffles I’ve ever made but remember what we all learned in school…don’t judge a book by it’s cover!

After reading a post last night in which Jenna used flax seed, it seemed like fate. I loved how convenient it was to make (1 tbsp flax seed and 2 tbsp warm water) and it definitely did give the waffles a nice slight nuttiness. Happy fiber and omega-3s… what up?!
Also, agave has stolen my heart. This sweetener substitute has been floating around the blog world for as long as I can remember. So when I spotted it at Walmart for 3 bucks I had to buy it.
Agave has a low glycemic index, according to All About Agave.com because it contains fructose, which is what provides the natural sweetness in fruits and vegetables. So, using agave doesn’t spike your blood sugar levels. Essentially, it’s like Splenda but all natural and essentially, better. I’m definitely going to be testing it the next time I bake *coughlatertodaycough*
Also also, agave (ah-GAH-vay) is the plant that tequila is made from………..and here’s the finished breakfast, topped with cut-up strawberries and my favorite topping EVER.
I don’t know if you know this, but I truly think I’m hilarious sometimes. They’re in love and I needed to Picnik about it!

D’awwwww, sorry lady bug eraser, you can’t waffles…you’re an eraser. You missed out though, this was an fabulous breakfast that might have just restored my faith in waffles. SMART.
Rewind to yesterday random stuff…like finally remembering to take a picture of my oatmeal! Bwahahaha.
Um, usually you can actually see the oats…I ended up finished what was left of two bags of cereal…oops.
- 1/3 cup oats
- 1/3 cup milk
- 1/3 cup water
- Half a banana
- 1/3 cup Fiber one cereal
- 1/4 cup Special K granola
- 1 tbsp AB
See? There are oats. They’re just hiding. THESE PARTICULAR OATS WERE CAMERA SHY. IT HAPPENS.
Sorry…I stick up for my oatmeal sometimes when it can’t defend itself. Normal.
In other news, watermelon is back and ready for action!
LOL mess LOL.
Refreshing and sweet and what could be considered the ultimate summer fruit. Word.
I also made some peanut butter chocolate covered figs.
Quick backstory. One night Serena came home from volleyball practice and made herself something to eat. I was in the basement cave at the time but when I came upstairs, lo and behold, the kid was eating a bowl of peanut butter and chocolate chips. The next morning, the damn thing was in our fridge…and continued to be in our fridge for a week.
Yesterday, I got sick of having it stare at me so I yanked the thing out and threw it in the microwave. I made Chubby buy me figs the other day ($1 for about 13 of them!) and I figured this was good way to break ’em in. So, out of complete craziness, PBCCFigs were born. They taste like the result of a Fig Newton and a Reeses Cup having a one night stand.

That’s all folks! My digesting time is officially up so it’s time to go for a run before the humidity gets to be too much. I’ve also got a lot of baking and other stuff to do today so it’ll be a boatload of pictures and fun and happiness. What I leave you with are the result of
