“I sure am!”

I’m back at my homeland that is Rider University. However, I have more pictures to show how my life has been going. Packing, errands and a certain bachlorette party that I attended for a certain bride-to-be.

This post is an update sort of deal like the previous one but after this the posts will start becoming more consistent and regular (now there’s enough fiber in the blog’s diet!)

While making my last trip to Whole Foods I spotted this and knew I had to have it. Goat cheese has been something that has been in the back of my mind for a while since becoming a blog reader so it was about time I tried yet another something that I never would have thought to try before!

I mixed this with a bunch more spinach to bulk it up and the result was great! The texture of the goat cheese was creamy and it was so much more flavorful that I could have imagined. Again, it was silly of me to ever have doubted the opinions of the blogworld!

FINALLY FOUND THE ELUSIVE NEW LARABAR FLAVORS!!! I literally jumped for joy when I saw the boxes and grabbed one of each. Chocolate Chip Cookie Dough was the first and it had legit chocolate chips in it and it was simply heavenly.

Finally got that giant 7-11 coffee that I’ve been lusting over the entire summer. Vanilla nut with some skim milk… perfect.

Bacholerette party to Hoboken was a hoot and a half! Lots of drinking and good times AND I took pictures of food in a public restaurant again! Go me, go me, it’s my birfdayyyy.

Appetizer eaten on the train. Spinach and crouton/bread crumbs mixed together. Simple but as we all know, you can’t doubt simplicity!

Watermelon margarita. Gigantic, kind of too sweet and I couldn’t really taste any of the alcohol. It’s OK though, the food was so much better.

Grilled vegetable sandwich on pita bread with a side salad. This had eggplant, roasted red peppers, zuccini and mozzerella. Although I had to use a knife and fork to eat it, it was amazingly delicious… like NEEDS-TO-BE RECREATED good. Can’t really go wrong with a veggie sandwich.

After dinner we hit up a bar, ended up at a pizza place, did a ton of walking, sat in a train station and all the while, enjoying THIS beautiful view.

Never been to Hoboken but now I know what all the fuss it about

Train station intoxicated photo 2010. Hahaha. We both went to MAC to get our makeup done beforehand and, not to sound cocky, we both ended up looking quite pretty if I do say so myself!

I’ve got ten minutes before I have to go to my FIRST class of the semester so I have to get going. Next post will be more food, some pictures of my dorm and some new fun stuff about the Rider gym! đŸ˜€

  1. TINY STRAWBERRIES!!!! AHH!
    I’ve been wanting to try Larabars since they’re gluten free. Maybe I’ll remember to get one the next time I’m out. I have yet to get back into the groove of list-making.
